Description: This waterless dessert mead was made using only Southern Highbush Blueberries and Florida Holly Blossom Honey. This honey was chosen for its rich notes of caramel, butterscotch, and vanilla. This Florida Holly Blossom honey is a once in a decade early spring super blooming of Yaupon holly (Ilex vomitoria), American holly (Ilex opaca), High-bush Gallberry (Ilex coriacea) and Dahoon holly (Ilex cassine). It should not be confused for regular Gallberry (Ilex glabra) honey that is available every year. Unlike wild blueberries, which are small and contain little juice, these S.H. blueberries were huge, juicy, sweet, and the best we've ever tasted!
