Description: White Rooster is an oatmeal pale ale that has steeped on Townshend’s White Peony Tea (aka Pai Mu Tan) for several days giving it a delicate and refreshing tea like aroma to complement the lemon zest and marmalade aromas from the hops. A portion of flaked oats were used to give White Rooster a creamy mouthfeel to offset the subtle tannic properties of the tea. Finally White Roosters floral aromas remind us of the spring blossoms. Winter is over! Spring has arrived with the call of the White Rooster. Prost!
