Description: This is the second edition of our Proximity Project Wild Ale Series. White Rabbit embodies just about everything we were looking for in a extremely palatable yet complex golden sour. White Rabbit is a golden sour that was inoculated with a mixed culture of brewer’s yeast and native wild microflora from our brewery grounds in Fulton and left to age in oak. There is a nice mix of funk, tart and lemon/peach forward aromatics. It has some delicious smarties candy qualities while throwing off notes of dank oranges. The beer and the wood it lives within, their simplicity and complexity, is at the core of the Proximity Project.
