Description: Plum Sliced is the fourth vintage of our wild ale series and this time re-fermented on plum. This beautiful red mixed fermentation sour has lovely funky notes and a touch of fleshy plum sweetness and tartness. This golden sour was inoculated with a mixed culture of brewer’s yeast and native wild microflora from our brewery grounds in Fulton. We aged this golden sour on oak then re-fermented it on top of plums in stainless. The beer and the wood it lives within, their simplicity and complexity, is at the core of the Proximity Project.
