Description: Subtle flavors of white wine tart fruit and aromas of wet oak. The first in the Wild West series. We used our Amber as a base and inoculated with Brett, Lacto and Pedio and left to age in a variety of different wine barrels for 6-12 months. The result drinks dry with small amount of tartness but dominated by a drying brett driven sour nature. Complex and unique, this series will change rapidly.
