Description: Calm is a new Mixed Fermie™ aged in red wine barrels inspired equally by Lambic and Saison. Designed and brewed by Justin (@catboy_), our Lead Brewer. We employed a single infusion mash of 60% barley and 40% wheat then boiled the wort extensively with both aged and fresh noble hops. Calm fermented and aged in barrels for 9 months with a Saison yeast supplemented by special cultures. Reminiscent of Lambic with a cleaner Saison-like finish. Bottle conditioned for 7 months.
