Description: Brewed with our friend Chris Tidwell, of Panther Island Brewing Company in Fort Worth, Texas, this Super Grisette started with Ohio malt and a grist bill that utilized Texas hay and honey smoked with foraged Texas lavender, rosemary, and thyme. We then added Chrs' own wild house culture, featuring spontaneous bacteria and yeast captured from the Texas air, to then ferment it in oak, then age it for a year. The result is a wild ale with smoky notes, light lemon, subtle herbaceousness, balanced acidity and a dry finish -- and one of the most unique sours we've ever made.
