Description: Innovation brewer David Barrett had a vision of Caribbean dark rum. Leaving the kettle, this kviek beer met blackstrap molasses in the hop back, and during active fermentation David dry-hopped with tropical varieties “to give the yeast some fun stuff to play with.” Then it all spent 6 months in rum barrels from Colombia. All David could think about? His childhood VHS of Romancing the Stone, a story set in Colombia where the villain Colonel Zolo “gets his hand bit off by a crocodile, and I respect him for that,” David says. This beer’s an adventure, to say the least. Aromas of plum and raisin usher in flavors of toasty oak, warm sweetness and fruity esters, with a slightly tart and clean finish. Recommended aging time: up to 2 years
