Description: Barrel-aged strong ale brewed with birch sap and chaga mushrooms. chaga was boiled down with the sap over a wood fire until the sap became syrup. intense kettle caramelization, cherry flavor from the mushrooms and a moderately bitter tannin structure end up in a syrup that was added back to the end of the boil. The beer was then aged in Chambourcin barrels with a touch of wild brettanomyces. 9.1% abv
