Description: What makes it a Wild Ale, you ask? After the unfermented beer is added to the tank, we intentionally delay adding yeast for several days to allow the natural micro-organisms in the environment to leave their mark. Once the beer has reached it's desired flavors, we add a dose of our House Yeast to complete the fermentation. This process gives the beer a more unpredictable quality and greater complexity. Each sip is layered with flavors of peaches, apricots and grapefruit, all backed by a mild layer of funky sourness. Light and drinkable, this beer remains quaffable, despite its unusual character.
