Description: Due to an unexpected warm spell, and subsequent frosts the 2012 crop was lost. Happily, I have good friends in tough times. I purchased apples from: Clark Brothers Orchard in Ashfield, MA. (Honeycrisp) Hamilton Orchards in New Salem, MA. (Macintosh, Cortland, Macoun) Poverty Lane Orchards in Lebanon, NH. (Ellis Bitter, Ashton Bitter) Ashton Blend is dry (less than 1% residual sugar). The tannins from the bitters (especially the Ashton Bitter) smooth the acid from the Macintosh without reducing the nose. Like New England Dry, Ashton Blend is fermented to 8%.
