Description: First fermented in stainless steel in February of 2016, Pennon was passed to neutral red wine barrels that were separately inoculated different wild yeast and bacteria. Barrels were chosen in February of 2017 and then blended and packaged to undergo final fermentation in the bottle. Blonde in color with a flavor profile composed of full-bodied lactic acidity, notes of lemon, white grape, and an overall floral experience.
