Description: In order to accentuate the natural stone fruit qualities of Alice and our house mixed culture, we decided to let her rest for three months on 1800 pounds of whole fruit peaches at a ratio of over seven pounds of fruit per gallon of beer. Peach Alice is an intense and impressive example of peach flesh on the nose with a bright fruity flavor that remains dry and not overly acidic in order to not diminish the base beer’s overall drinkability.
