Description: Apple Pie is a single barrel of 18 month-old spontaneous beer that we aged further in a bourbon barrel generously given to us by our friends at Pips Meadery. Before making its way to us, the Buffalo Trace store pick barrel held a cinnamon version of Pips’ amazing cranberry mead, La Hire. After six months of additional aging, the beer picked up a deep color and incredible aromatics reminiscent of apple orchards, cinnamon sugar donuts, oak vanillin, and a fruity Brettanomyces funk. To subtly complement these characteristics, we refermented the beer on a small amount of fresh apple cider before packaging and bottle conditioning.
