Description: This beer was created using 2021 harvest yuzu citrus macerated with single tank foudre fermented and aged spelt saison. The beer was hopped entirely with whole flowers from Washington and Germany and fermented with a mixed culture of appropriated and ambient strains. Refermented to condition in the bottle with organic cane sugar.
