Description: Ale Fermented in Oak Against Death is a series of blended bitter beers macerated with fruit and Botanicals Blend #1. This blend is comprised of a spelt and einkorn beer which underwent primary fermentation on spent 2020 harvest pluots from Collins Family Orchards as well as oak fermented wheat saison. The blend was macerated with organic Calendula flower, organic gentian root, and Californian 'Star Ruby' grapefruit peel. This beer was refermented to condition in the bottle using raw Washington Star Thistle honey. Bottled 07/22/2021
