Description: The combination of a US style IPA and a Belgian Witbier in one glass creating a “White IPA” is a beer made for Summer. It looks like a wheat beer, pale hazy, big fluffy white head but here’s where the style guidelines are thrown out the brewery window. The Belgian witbier yeast and coriander in the boil provide those typical witbier aromas of citrus, floral and spice. But dry hopping with NZ Cascade, US Amarillo and US Centennial hops gives a complexity to the beer that you’d not expect from a wheat beer – but then it’s not is it….. The flavour is something else – light to medium body, with a medium bitterness and soft mouth-feel, fruit and citrus characters round the beer off nicely. Here’s where things start to get funky. The beer finishes cleanly with a crisp citrus snap provided by a Thai culinary delight - Lemongrass was added to the conditioning tank after dry hopping and allowed to infuse into the beer until we were happy with the balance of all the flavours combined. It was fantastic coming into the brewery every day and sampling White Tail, the changes were amazing across a week. It took a lot of sampling so there’s not as much to go around the taps as there might have been !! Oh dear. Enjoy what kegs of White Tail the Brew Crew has left for you! We reckon it’s a great way to enjoy those long days of summer. Cheers from us down here in Dunners.
