Description: Aged for 18 months in Wente Chardonnay barrels, this beer started as a Hefe base. We blended 5 different Barrels of this beer after it matured and developed. Four of which were Hefe with our House blend of Lacto/Pedio/Brett. The fifth was a former Framboise barrel that imparted a subtle, dry-fruitiness. The final blend has a sharp lactic flavor with a subtle hint of acetic acid. The flavor and aroma are reminiscent of lemon fruit, with a bit of delicate sweetness that underlies the entire experience.
