Description: This batch of Wild Hundo was fermented with Brett inside a 600L [158.5 Gallon] Demi Muid barrel for a total of 4 months. In the final 45 days of fermentation Camacho and his team added Passion Fruit Concentrate. At some point during fermentation, either from the passion fruit, wood, or exposure to bugs in the Specialty Beer Lair in San Leandro, Lactobacillus reached the brew, providing a noticeable tartness. After tasting, we agreed that the exposure proved to be quite beneficial to the batch. The lacto flavor is a slight tart snap on the tongue that meshes with the funky/stone fruit body and lingering Amarillo and Simcoe dry-hop. The beginning will be reminiscent of a passion fruit smoothie and will fade with soft citrus bitterness and ever-so subtle sour tartness.
