Description: The latest release born out of our co-worker Small Batch Brewing Program is the brain child of two of our engineers, Jon Dolor and Mike Frank, and Milton Brewer Lou Carrazzone, and is based on the classic Mediterranean dessert Baklava. They took the main ingredients and flavor components of the dessert and wove them into a brown ale packed with notes chocolate and citrus. Chocolate malts add the characteristic brown color and milk chocolate hazelnut flavors, while Orange Blossom honey adds fruitiness but helps to dry out the malt profile and cut down on sweetness. Orange Blossom Water was added in the whirlpool after the boil to give it characteristic notes of citrus to complement the chocolaty notes. They even decided to add Phyllo dough to the mash to stay true to the beers influences. The result is a sultry brown ale just in time to welcome the closing of summer and the cooler nights. Phyllosophy pairs greatly with any of our hearty wood grilled offerings or delectable desserts, but can also fly solo as the perfect digestif.
