Description: While most IPA’s get a dose of hops at post-boiling temperatures, this brew took the extra step of cooling to 170 degrees to preserve the volatile mycrene oils which are present in Simcoe and Amarillo varieties. The result is a smoother bitterness and hop character than a traditional whirlpool hop addition, which was then accentuated by a dry hop with Mosaic for additional complexity.
