Description: 1&2 years old lambic with apricots (o.a Bergeron) from the Ardeche in France. This blend has a more sour profile than Moonwalk. -- Just as we look every year for the specific barrels with a soft lambic and lactic touch for the Moonwalk, we also encounter other beautiful barrels during this tasting. In this blend we combine the soft lambic with a fresher lambic. These lambics “dance” together with the apricots in the fermentation tank. The apricots are also Bergerons from France. These apricots are characterized by their juicy and fleshy character with a deep flavor.
