Description: Mitte is based on a Berliner Weisse, aged in old chardonnay barrels (French oak), and matured for 6 months. Cultures of Brettanomyces Bruxellensis & Lactobacillus Delbuckii were added after the intial souring during the kettle fermentation, and subsequent saccharomyces fermentation. The use of wood was not so much integral to the flavour, but to provide a hint of chardonnay to complement the natural vinous character from the Berliner Weisse.
