Description: PARADISE is a blend of our spontaneous solera red, ELSEWHERE, with a custom-designed pale blonde recipe. We blended 20% of the original red base with this new pale blonde base to provide a round and balanced malt character, along with giving the beer a sunset-orange hue. The microbes from the solera were originally captured nearly three years ago in our rooftop coolship and then barrel fermented for almost a year. After maturing in the barrel, we transferred ELSEWHERE into Black Project soleras, allowing us to make new batches using the base beer and microbes that were caught in the coolship. By blending the pale blonde base with the red base, a secondary fermentation has allowed these microbes to really shine, giving the beer an assertive and complex acidity, with a moderate dose of farmhouse funk. This beer is a great example of the range of beers that can be created using only coolship-caught microbes and spontaneous fermentation.
