Description: EXPERIMENTAL #3 is a blend of three years of traditional, Lambic-inspired, coolship, spontaneous ales. After blending and maturing in A.D. Laws Four Grain Bourbon barrels, we added both Oyster and Black Trumpet mushrooms to the barrels for another bottle maturation period. Oak vanillin and soft bourbon notes are followed by earthy funk and a lighter acidity.
