Description: Another new addition to our 'The' series of beers. This melds multiple years of spontaneous coolship beer from our barrels and introduces fresh apricots from Baird Family Orchards to the composition in secondary oak tanks. Further fermentation and aging for several more months prior to bottling provide a complexity that only grew during its natural conditioning in bottle for an additional five months. Ready now, this presents a sizable apricot impression with an intriguing fruity spice from the inclusion of over half of the pits along with fruit flesh, with an earthy close and prickly acidity. Mature Brett character weaves into the flavor and aroma along with old oak and forest character.
