Description: Grails and Waysigns is an open fermented wheat beer inspired by stories of 19th and 20th century Belgian and French farm beers. The 2018 blend was fermented in an open top oak tank with a mixed culture of yeast including strains appropriated from some of our favorite saisons. Brewed with wheat, pilsner malt, aged and fresh English and German hops, and water from the Cedar River Watershed. After primary fermentation it was aged in white wine barrels until ready. It was refermented in the bottle, and will continue to develop over time. Bottled 10/24/17.
