Sitting at Burial while drinking “Izakaya Afternoon,” conversation turned to the partnership of vanillin tones and umami of a miso addition acting as a cuisine cheat for barrel time. A couple of draughts later Shinshu was born. Burial came up and together we birthed a cream ale having a serious miso addition that moves it into the vanilla cake batter world of aromas without getting too sweet.
